Herb Balls

These snacks are a great way to get herbs into children of all ages. With the fennel, coriander and cumin mix along with the brazil nuts. They are a great boost for the thyroid.

Ingredients

  • 350g/12oz mixed dried fruits

  • 100g/4oz brazil nuts

  • 100g/4oz shredded coconut, (unsweetened )

  • Grated rind of 1 lemon or 1 orange or a combination

  • I to 2 tablespoons of orange juice , (you can definitely play with the liquid you add, I sometimes add rosewater or orange blossom water instead of the juice

  • Some ground herb powder (whatever takes your fancy) Add as much or as little as you like depending on flavor and how medicinal you want these balls to be. Fennel , coriander and cumin are delicious in these balls.

  • A little extra coconut for coating the balls

Instructions

  1. Place the nuts, dried fruits in blender or by hand until finely chopped.

  2. Add the coconut, zest, herb powder and enough liquid so the mixture sticks together.

  3. Place some coconut in a shallow bow, roll the mixture in to bite sized balls and then coat with the remaining coconut.

  4. Refrigerate for 1 to 2 hours.

  5. Enjoy!
